After you have removed everything from your cabinets take this time to clean them, and if you think that it is needed consider replacing any shelf paper that is not in good condition. Sort all of your kitchen items in to like categories and set every piece that you seldom or occasionally use to the side. Throw out anything that is broken and if you are sorting dry foods as well make sure that you trash anything that is expired or gone stale.

Use a bakeware organizer to house your cookie sheets, cutting board and other like items so you can stand them up and save room. To make it easier to reach things in the back of your lower cabinets use a roll out drawer and to reach things easier from higher shelves use pull down organizers.
